Of course we didn't boil it enough, but also, the recipe we followed (from the Ball Blue Book of Preserving) called only for strawberries and sugar -- in other words, if I understand what you've written here, it was more like a preserve recipe. Anyway, without knowing by sight or feel, I processed the batch too early. No matter -- sight and feel comes in time. I'm going to try a different recipe tonight, one that has some lemon zest and juice in it, though no pectin.
